Cilantro Lime Shrimp & Roasted Asparagus

This weekend I discovered a couple very cool websites on eating Gluten-Free.  I found this one particularly helpful in gathering recipes for this weeks meal plan:  Adventures of a Gluten-Free Mom.

I snagged this meal from her site.  It was easy… well, yeah, easy.  A bit time consuming because I forgot to thaw, peel, and devein the shrimp ahead of time.  Being a work-at-home mom, I am lucky that on my lunch break, I can usually squeeze in dinner prep.  I prepped the asapargus but forgot about the shrimp.  Oh well.  It all worked out okay!

There is no reason a work-away-from-home mom/dad could not do the same prep the night before and refrigerate shrimp.  Or even better, if you are lucky enough to live in a spot where you can get wild-caught shrimp already peeled and deveined.   I just feel blessed that I can get wild-caught shrimp at all in my local grocery store.

Let’s be real here.  I am a wanna-be photographer and food stylist.  I know I am not the great at either.  This meal was delicious and filling.  I think I used a little too much salt on the aspargus but everyone ate them all gone so it could not have been that bad!   Also, I added a little bit of Ms. Dash Fiesta Lime seasoning to the shrimp.  So so good.

There was just enough leftover shrimp for me to use for lunch tomorrow too.  I plan to chop them up with a little mayo and squeeze of lime juice.  yuuummmmm!!!!  Shrimp are awesome.
